Nutritional Notes:

Sun dried Tomatoes and Chickpea Pasta is an "Eat Regularly" 85 out of 100. Although there is 79.5 grams of carbohydrates per serve these carbs are sourced from the low GI energy from pasta and chickpeas. There's also a high fibre content of 12.8 grams per serve. Overall a healthy vegetarian dinner.

Sun Dried Tomatoes and Chickpea Pasta

Ingredients - Serves 4

  • 1 spring onion
  • 2 zucchini's
  • Canned Chickpeas 2 x 400g
  • 1/2 cup of semi dried tomatos
  • Chili (to taste)
  • 2 cloves of Garlic
  • 1/4 cup of lemon juice
  • 1 tablespoons of olive oil
  • 1 1/2 cups Wholemeal Pasta
  • 1 1/2 cups Plain Pasta
  • 1/2 cup grated Parmesan or Tasty Cheese
  • 4 Tablespoons of fresh Parsley

Methods

  • Cook Pasta for 10 minutes in boiling water
  • Whilst pasta is cooking, add garlic, onion and zucchili and olive oil into a non stick pan. Cook on medium heat until zucchili has softened. 
  • Add Lemon juice, tomatoes and chickpeas and bring to heat
  • Drain pasta
  • Add Chickpea and zucchini mixture to pasta and serve with parmesan or tasty cheese and parsley
