Sweet Couscous Salad
Ingredients - Serves 4
- 2 Cups of Couscous
- 2 Cups of Chicken Stock
- 1/2 Cup of mint leaves
- 10 Fresh Dates
- 1 Cup of Walnuts
- 1 teaspoon of ground cinnamon
- 1/2 cup lemon juice
- 3 tablespoons olive oil
Methods
- Add Couscous to a mixing bowl. Pour in hot chicken stock. Cover for 5 minutes
- Mix lemon juice olive oil and cinnamon in a seperate bowl
- Add diced mint, walnuts and Dates
- Pour mixture into Couscous and stir lightly
- Serve
