Sweet Couscous Salad

Ingredients - Serves 4

  • 2 Cups of Couscous
  • 2 Cups of Chicken Stock
  • 1/2 Cup of mint leaves
  • 10 Fresh Dates
  • 1 Cup of Walnuts
  • 1 teaspoon of ground cinnamon
  • 1/2 cup lemon juice
  • 3 tablespoons olive oil

Methods

  • Add Couscous to a mixing bowl. Pour in hot chicken stock. Cover for 5 minutes
  • Mix lemon juice olive oil and cinnamon in a seperate bowl
  • Add diced mint, walnuts and Dates
  • Pour mixture into Couscous and stir lightly
  • Serve
